New Restaurant 'Jasper' By Dyan Carlson to Be Downtown

Jasper is a stone representing physical strength and energy, known as the "supreme nurturer" for sustaining and supporting in times of stress, and bringing tranquility and wholeness. The stone is the namesake for Dyan Carlson's new restaurant in downtown Glasgow, tentatively set to open in September.

Housed in the space formerly occupied by Little Campers and the Wheatgrass Arts Gallery, Jasper will be a grab-and-go lunch spot featuring dishes currently served under the auspices of Carlson's Table for Six To Go. Carlson has culled from her ever-rotating menu of options and will be offering up local favorites at her service counter, along with a selection of sparkling and still waters. "Fresh starts here," she said. "That's the working motto and representative of what I'll be offering."

Carlson has taken advantage of the quarantine imposed to combat COVID-19, using the quiet time to bring her dream to life. The space is marked out and drawings are pinned to the wall. Her endeavor will pay homage to the town and area she has fallen in love with. She is delighted in going through her design ideas, born into being through the creative efforts of Sean R. Heavey, Dave Alstedt, Quinn Heavey and herself.

Minnow baskets will serve as chandelier casings. An old barn door from Kevin Taylor has been requisitioned for the space as have old windows and doors for an interior wall. Q. Heavey will be designing and painting a mural near the service counter and an array of hard-to-find ingredients and those used in her Table for Six classes will be available in a small retail area of the restaurant.

As for those classes, "you'll be seeing a lot more offerings when we open," Carlson said. The two businesses will remain separate. "Table for Six will be offered at Jasper," she explained. The space will be arranged to accommodate the classes, including an angled mirror above the preparation area, giving students the opportunity to participate via "point of view."

Jasper promises a modern chic aesthetic, thanks in no small part to the talents of S. Heavey and Alstedt. S. Heavey, owner of the space, has embraced the project and Carlson says his passion for downtown Glasgow has been a driving force for moving the project forward. Alstedt has brought his carpentry skills and is working on the table to be used for classes and private events. "I couldn't have done this without them," she said.

Carlson is hopeful the new space will bring in more events to downtown Glasgow, noting that with the Loaded Toad on the other side of the gallery, event planners will have options for food and beverages. She is looking to collaborate with other vendors in the area, looking at seasonal offerings also.

Carlson has stayed busy through the state's shelter-in-place order, and promises to remain busy with Jasper and Table for Six. "Fresh and healthy, that's the food," she said. "The stone represents peace and good energy. That's what I want to give back to Glasgow."
